Pastry Chef de Partie

The Pastry Chef de Partie's main role will involve preparing, cooking and presenting Michelin star dishes within the pastry section of The Glenturret Lalique Restaurant, whilst maintaining product standards and supporting the Head Pastry Chef, Sous Chef and Executive Head Chef in the general running of the kitchen, adhering to Food Safety Standards.

Key Responsibilities 

  • Assisting the Head Pastry Chef in creating menu items, recipes and developing dishes
  • Compiling and completing the list of daily mise en place tasks for the section to the required standard within the given time
  • Setting up the Kitchen prior to the Restaurant opening
  • Plating food creatively and maximising customer enjoyment
  • Checking and putting away deliveries as required
  • Assisting with the management of health and safety
  • Assisting with the management of food hygiene practices
  • Supervising and training Commis Chefs
  • Appropriately delegating and assisting in all tasks delegated within the section
  • Cleaning down the section at the close of each shift and assisting with any other cleaning tasks as required
  • Ensuring wastage is kept to a minimum and preventative measures are fully understood
  • Overseeing the maintenance of kitchen and food safety standards
  • To be aware of and comply with Legal, Government and Company Policies relating to Fire, Hygiene, Health & Safety
  • Supporting the Head Pastry Chef in organising daily training sessions on all aspects of food
  • Executing any changing menus as required for the restaurant to the agreed specifications
  • Carrying out any reasonable tasks as requested by the Head Pastry Chef, Sous Chef and Executive Head Chef

    Knowledge, Skills and Core Competencies 

  • Proven experience as a Pastry Chef, baker or relevant role
  • High level of attention to detail and creativity
  • Understandable level of spoken and written English
  • Ability to work without close supervision
  • Ability to assist with producing good quality food in all sections
  • Enthusiasm to develop your own skills and knowledge
  • Adaptability to change and willingness to embrace new ideas and processes
  • Positive and approachable manner
  • Team player qualities
  • Outstanding communication skills
